Quinoa Tabbouleh

Quinoa Tabbouleh


INGREDIENTS:
  • 2 cups water  
  • 1 cup uncooked quinoa 
  • 1/2 cup coarsely chopped tomato  
  • 1/2 cup chopped fresh mint  
  • 1/2-cup raisins  
  • 1/2 cup chopped cucumber  
  • 1/4-cup fresh lemon juice (or juice of 2 lemons) 
  • 2 tablespoons chopped green onions  
  • 1-tablespoon extra-virgin olive oil  
  • 2 teaspoons minced fresh onion  
  • 1/2-teaspoon sea salt  
  • 1/4 teaspoon freshly ground black pepper 

DIRECTIONS:
  1. Combine water and quinoa in a saucepan and bring to a boil. 
  2. Cover, reduce heat, and simmer 20 minutes until liquid is absorbed. 
  3. Remove from heat and fluff quinoa with a fork.  
  4. Stir in all other ingredients. 
  5. Cover and let stand 1 hour.  
  6. Serve chilled or at room temperature.
