High Mountain Olive planks: Soak your planks in water for approximately two hours to rehydrate the natural sap flavor of olive wood. Coat with olive oil. Rub both sides of the chicken breasts with a rosemary and garlic combination. Place the planks on a cookie sheet and add the chicken, presentation side down. Put under the oven broiler or on your grill. Cook until approximately half way cooked, then flip to finish. Garnish and serve on the plank.
