High Mountain Olive Chips: The North American cousin to the Mediterranean olive has mild smoke flavor with a hint of nut and fruit. It is not an overpowering smoke flavor which makes it a great compliment for lamb and poultry. Combined with the Mediterranean and Arab spices it adds the open fire taste reminiscent of Old World cooking. Rub lamb chops with a dry mixture of brown sugar, tarragon, ginger, cinnamon, and garlic. When your olive chips begin to smoke, add the lamb chops to the grilling surface. Finish to taste.
