Northern Oak Chips: The smoke from the red oak of Maine has a nutty smoke with a hint of vanilla which makes it a great wood for grilling or smoking white fish, poultry, and cheese. Many fruit based desserts can be lightly smoked with oak as well. Place the oak chips in a smoker box or aluminum pie plate directly on the heating element of grill.
