Mesquite grilled meat, from beef to everything else, was surely the staple of the day. The traditional mesquite is still popular today. However, because of the fast growing nature of mesquite it quickly made its way to the Northeast as an ornamental for farms, parks, and cemeteries. The shortened growing season in Maine has produced a mesquite with tighter growth rings and a much sweeter and milder smoke flavor.
